Avo-Edamame-Miso Mash for Gut Health
Ingredients
- 200g edamame beans boiled and drained
- 1/2 avocado
- 2 shallots
- 1.5 lemons juiced
- 2 tbsp organic white miso paste
- 1 tbsp mirin
- 1 garlic clove minced
- splash of water
- salt and pepper
Preparation
Add all ingredients into a food processor and blend until well mixed, using a stick to move things around as needed.
Serve 1 heaped tbsp on 1 slice of whole grain bread or yummy seeded crackers, also great as a dip with corn chips.
Scoop the remaining into a jar or serving bowl. If not serving right away, seal and place in the fridge for up to 1 week.
