Avo-Edamame-Miso Mash for Gut Health

Ingredients

  • 200g edamame beans boiled and drained
  • 1/2 avocado
  • 2 shallots
  • 1.5 lemons juiced
  • 2 tbsp organic white miso paste
  • 1 tbsp mirin
  • 1 garlic clove minced
  • splash of water
  • salt and pepper

Preparation

  1. Add all ingredients into a food processor and blend until well mixed, using a stick to move things around as needed.

  2. Serve 1 heaped tbsp on 1 slice of whole grain bread or yummy seeded crackers, also great as a dip with corn chips.

  3. Scoop the remaining into a jar or serving bowl. If not serving right away, seal and place in the fridge for up to 1 week.
