Basic Homemade Oven Bread
Ingredients
Pre-ferment
- 1 cup warm water
- 1 cup flour
- 1 teaspoon instant yeast
Main dough
- 2.5 cups warm water
- 1 packet instant yeast
- 1 heaping teaspoon salt
- 6-7 cups flour
Topping
- 1 tablespoon yogurt
- 1/2 cup water
Preparation
Prepare the pre-ferment and let it ferment for 12 hours at room temperature.
Using the pre-ferment, make a soft, non-sticky dough by kneading well with the main dough ingredients and let rest for 45 minutes.
Divide the dough into 8-10 pieces, cover with a clean cloth, and let rest for 10 minutes.
Shape the pieces and place on a parchment-lined or floured baking sheet, spaced apart; let rise for 30-45 minutes.
Brush with the yogurt-water mixture and score the tops with a razor or sharp knife.
Preheat the oven to 250°C for at least 20 minutes, placing a bowl or dish with hot water in the corner.
Bake the breads until done, approximately 21 minutes.
Notes
Baking time may vary depending on the oven. Can be baked with or without fan setting.
