Cinnamon Roll Pancakes

Ingredients

  • 200g mashed over-ripe banana
  • 100g self raising flour
  • a squeeze of lemon juice
  • 1 tsp baking powder
  • 150ml any milk
  • filling - 1 tsp ground cinnamon and 2 tbsp sweetener

Preparation

  1. Chop banana and microwave for 1 minute until mushy (over ripe bananas are best and even better if you’ve got some from frozen as when microwaved they create a natural sweet juice)

  2. Put everything into a bowl and mix until smooth

  3. Spray cooking spray/oil into a pan and fry pancakes on each side for a minute or so

  4. Transfer onto a plate

  5. Mix the sweetener and cinnamon together and then spoon onto each pancake

  6. Roll up each pancake and slice to make roll ups

  7. Serve with plain yoghurt and a drizzle of maple syrup
