Cinnamon Roll Pancakes
Ingredients
- 200g mashed over-ripe banana
- 100g self raising flour
- a squeeze of lemon juice
- 1 tsp baking powder
- 150ml any milk
- filling - 1 tsp ground cinnamon and 2 tbsp sweetener
Preparation
Chop banana and microwave for 1 minute until mushy (over ripe bananas are best and even better if you’ve got some from frozen as when microwaved they create a natural sweet juice)
Put everything into a bowl and mix until smooth
Spray cooking spray/oil into a pan and fry pancakes on each side for a minute or so
Transfer onto a plate
Mix the sweetener and cinnamon together and then spoon onto each pancake
Roll up each pancake and slice to make roll ups
Serve with plain yoghurt and a drizzle of maple syrup
