Cookies and Cream Protein Pudding

Ingredients

  • 100 to 150 grams of cottage cheese or a blend with 0% Fage Greek yogurt
  • 3-4 grams sugar-free chocolate pudding mix or any flavor
  • A couple drops of liquid stevia or a sweetener packet
  • Optional: dash of Swerve confectioners sugar
  • 10-15 grams or 1 scoop of vegan protein powder
  • Unsweetened cashew or almond milk
  • Cookies and cream cookie butter
  • Optional: chocolate chips

Preparation

  1. Mix all ingredients except the cookie butter and optional chocolate chips.

  2. If the mixture is too thick, add more almond milk to thin it out, then stir in the cookie butter last.

  3. Place in the fridge or freezer for 5-10 minutes to set.

  4. Optionally, add chocolate chips for extra fanciness, such as Lily's baking chips sweetened with stevia.
