Creamy Apple Cardamom Oatmeal
Ingredients
- 1 1/2 cups unsweetened non-dairy milk
- 1/2 cup water
- 1/4 tsp salt
- 1 cup old-fashioned rolled oats
- 1 tbsp brown sugar or maple syrup (add 1 more tbsp for additional sweetness)
- 1 tbsp almond butter
- 1 tsp vanilla extract
- 1 tsp ground cardamom
- 1/2 tsp ground cinnamon
Stewed apples
- 1 fuji apple, diced
- 2 tbsp water
- 1 tbsp maple syrup or brown sugar
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cardamom
- salt
- 1/2 tsp vanilla extract
- 1 tsp corn starch + 1 tsp water
Preparation
In a medium saucepan, combine non-dairy milk, water, salt, and rolled oats. Bring to a boil over medium heat, then reduce heat and simmer for 5-10 minutes or until creamy, stirring occasionally.
Stir in brown sugar or maple syrup, almond butter, vanilla extract, ground cardamom, and ground cinnamon. Remove from heat and set aside.
For the stewed apples, in a small saucepan, combine diced fuji apple, water, maple syrup or brown sugar, ground cinnamon, ground cardamom, and a pinch of salt. Cook over medium heat for about 5 minutes or until apples are soft.
In a small bowl, mix corn starch with water to form a slurry. Add the slurry to the apples and cook for another minute until thickened. Stir in vanilla extract.
Serve the oatmeal in bowls and top with the stewed apples.
