Homemade Strawberry Jam Pockets

Ingredients

  • 2 slices of bread (gluten-free)
  • 1 tablespoon jam or fruit purée
  • 1 teaspoon coconut oil or low-fat cooking spray
  • 1 tablespoon sugar or sweetener

Preparation

  1. Place two slices of bread on a chopping board and place a spoonful of jam in the centre of one slice.

  2. Put the second slice on top and use the bottom of a mug, glass, or cookie cutter to cut out a round circle.

  3. Pinch the edges down to make a pocket.

  4. Put oil in a hot frying pan and then add the doughnut, flip until golden.

  5. Remove the doughnut from the pan and roll in sugar or sweetener.
