Meal Prep Freezer-Friendly Breakfast Sandwiches

Ingredients

  • 6-8 eggs
  • Dash of salt
  • Dash of pepper
  • English muffins
  • Cheddar cheese
  • Ham or turkey

Optional additions

  • Avocado for mashing

Preparation

  1. Whisk 6-8 eggs with a dash of salt and pepper.

  2. Add the mixture to a lightly greased 8x8 baking dish and bake at 350°F for 12-15 minutes or until set.

  3. Cut the egg bake into 6 equal squares.

  4. Place English muffin halves on a baking sheet and toast in the oven for 3-5 minutes.

  5. Assemble the sandwiches with cheddar cheese, egg, and ham or turkey.

  6. Let the sandwiches cool and store in the fridge or freezer, wrapping each one individually.

Tips

  1. Optionally add avocado mash before eating.
