Raspberry Chia Oat Parfait

Ingredients

  • 1/2 cup oats
  • 2 cups soy milk
  • 3 tablespoons chia seeds
  • 1/3 cup raspberries (few for decorating)
  • Maple syrup to taste
  • 1 cinnamon stick
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut cream

Preparation

  1. In a pan, add oats, cinnamon stick, raspberries, and 1 cup of soy milk. Boil and cook until done. You can add water or more milk for a runnier consistency.

  2. Add maple syrup and mix well.

  3. For the chia pudding, add chia seeds to a bowl with the remaining cup of soy milk and maple syrup. Mix well until combined and fluffy.

  4. Layer the mixture in glasses as desired and top with whipped coconut cream. Enjoy.
