Vegan Tofu Scramble Breakfast Sandwich

Ingredients

Tofu scramble

  • 2 shallots
  • 2 garlic cloves
  • 400 grams firm tofu
  • 1.5 teaspoons turmeric
  • 0.5 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon cayenne
  • 1/4 cup nutritional yeast
  • 1 teaspoon soy sauce
  • Salt to taste

Sandwich

  • 2 sourdough slices
  • 1/2 avocado
  • 1 sweet potato
  • 1 heaping tablespoon olive tapenade
  • 1 heaping tablespoon zhoug
  • 3 scoops tofu scramble

Preparation

  1. Sauté the shallots and garlic in oil for 2 to 3 minutes.

  2. Add the crumbled tofu along with the turmeric, cumin, smoked paprika, cayenne, nutritional yeast, soy sauce, and salt to taste, then mix for 4 to 6 more minutes.

  3. Bake the sweet potato until soft and mash it.

  4. Slice the avocado.

  5. Toast the sourdough slices.

  6. Assemble the sandwich by combining all the remaining ingredients.
