Vegetarian Breakfast Fry-Up

Ingredients

  • 2 Lincolnshire sausages
  • Vegan black pudding
  • 1 medium vine tomato
  • Baby button mushrooms
  • 1 Old Cotswold Legbar egg
  • Baked beans
  • Soya and linseed bread
  • Spreadable butter
  • Sea salt
  • Chives
  • Chilli flakes

Preparation

  1. Pan fry the sausages until cooked through.

  2. Slice and fry the vegan black pudding until heated and slightly crisp.

  3. Slice the vine tomato and fry until tender.

  4. Slice and fry the baby button mushrooms until softened.

  5. Fry the egg in a single egg pan to your preferred doneness.

  6. Heat the baked beans in a saucepan until the sauce thickens.

  7. Toast the soya and linseed bread until golden brown.

  8. Spread the butter on the toasted bread.

  9. Season the dish with sea salt, chives, and chilli flakes to taste.

  10. Assemble all components on a plate and serve immediately.
