Vegetarian Omelette Stack with Spinach and Mushrooms
Ingredients
- 3 eggs
- Squeaky Bean veg ham style slices (2)
- Spinach
- Peashoot salad
- Mushrooms
- Cherry tomatoes
Preparation
Beat the eggs and season with sea salt and white pepper.
Fry the beaten eggs in a single egg pan and keep warm in a 140°C oven.
Layer the omelette with ham style slices, spinach, and other ingredients.
Top with a fried egg.
Serve with peashoot salad, fried mushrooms, and actifried cherry tomatoes.
Note: Normally include cheese slices, but they can be omitted.
