Vegetarian Omelette Stack with Spinach and Mushrooms

Ingredients

  • 3 eggs
  • Squeaky Bean veg ham style slices (2)
  • Spinach
  • Peashoot salad
  • Mushrooms
  • Cherry tomatoes

Preparation

  1. Beat the eggs and season with sea salt and white pepper.

  2. Fry the beaten eggs in a single egg pan and keep warm in a 140°C oven.

  3. Layer the omelette with ham style slices, spinach, and other ingredients.

  4. Top with a fried egg.

  5. Serve with peashoot salad, fried mushrooms, and actifried cherry tomatoes.

  6. Note: Normally include cheese slices, but they can be omitted.
