Vegan Banana Nut Muffins

Ingredients

  • 1 1/2 cup coconut flour
  • 3/4 cup pure cane sugar
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • dash of chia seeds (optional)
  • 2 mashed ripe bananas
  • 3/4 cup non-dairy milk
  • 1/4 cup coconut oil
  • 2 tbsp vanilla extract
  • 1/2 cup pecans or walnuts
  • crushed pecans for topping (optional)

Preparation

  1. Combine the dry and wet ingredients together.

  2. Stir in 1/2 cup of pecans or walnuts.

  3. Place the mixture in muffin tins and sprinkle crushed pecans on top for texture.

  4. Bake in the oven at 400 degrees for 22 minutes.

  5. Enjoy the muffins, optionally paired with peanut butter and cold brew.
