Vegan Brownie Banana Bread
Ingredients
- 2/3 cup firm mashed ripe banana
- 1/8 cup gluten free fine flour
- 1 flax egg (1 tbsp ground flax/chia + 2 1/2 tbsp water)
- 1 tbsp almond butter
- 2 tbsp cacao powder
- 2 tsp organic coconut sugar
- 1 tsp organic vanilla extract
- 1 1/4 tsp cinnamon
- 1/4 tsp sea salt
- 2 tbsp vegan dark chocolate gems
Preparation
Pre-heat oven to 350 F.
Prepare flax egg by combining 1 tablespoon ground flax or chia with 2.5 tablespoons water. Stir and set aside for 10-15 minutes or until fully gelled.
In a small bowl, mash banana until smooth with little or no lumps. Add vanilla extract, flax egg, coconut sugar, and almond butter. Stir until well combined, then set aside.
In a medium-sized bowl, combine dry ingredients: flour, cinnamon, salt, and cacao powder. Whisk to remove any lumps.
Add the wet ingredients to the dry ingredients and stir until smooth.
Pour the mixture into a greased 9-inch springform pan and top with dark chocolate gems.
Bake for 20-25 minutes.
