Vegan Brownie Banana Bread

Ingredients

  • 2/3 cup firm mashed ripe banana
  • 1/8 cup gluten free fine flour
  • 1 flax egg (1 tbsp ground flax/chia + 2 1/2 tbsp water)
  • 1 tbsp almond butter
  • 2 tbsp cacao powder
  • 2 tsp organic coconut sugar
  • 1 tsp organic vanilla extract
  • 1 1/4 tsp cinnamon
  • 1/4 tsp sea salt
  • 2 tbsp vegan dark chocolate gems

Preparation

  1. Pre-heat oven to 350 F.

  2. Prepare flax egg by combining 1 tablespoon ground flax or chia with 2.5 tablespoons water. Stir and set aside for 10-15 minutes or until fully gelled.

  3. In a small bowl, mash banana until smooth with little or no lumps. Add vanilla extract, flax egg, coconut sugar, and almond butter. Stir until well combined, then set aside.

  4. In a medium-sized bowl, combine dry ingredients: flour, cinnamon, salt, and cacao powder. Whisk to remove any lumps.

  5. Add the wet ingredients to the dry ingredients and stir until smooth.

  6. Pour the mixture into a greased 9-inch springform pan and top with dark chocolate gems.

  7. Bake for 20-25 minutes.
