Vegan Chocolate Rice Crispies with Sea Salt

Ingredients

  • 1/4 cup Earth Balance
  • 1 pack vegan Dandies vanilla marshmallows
  • 5 cups rice crisps
  • 1/2 cup Enjoy Life chocolate
  • 1 teaspoon coconut oil
  • Maldon sea salt

Preparation

  1. In a large pot, melt 1/4 cup Earth Balance and a pack of vegan Dandies vanilla marshmallows.

  2. Once melted, stir in 5 cups rice crisps until combined. Note: Stirring might be a bit of a workout.

  3. Spread the mixture on a cookie sheet lined with parchment paper.

  4. Cover with another piece of parchment paper and press down to shape into a rectangle.

  5. Refrigerate for 30 minutes.

  6. Melt 1/2 cup Enjoy Life chocolate with 1 teaspoon coconut oil.

  7. Cut into squares, dip each square into the melted chocolate, and sprinkle with Maldon sea salt.

  8. Refrigerate for another 15 minutes.

  9. Enjoy the treats!
