Vegan No Bake Strawberry Lemon Cookie Bites

Ingredients

  • 1 cup raw almonds
  • 1 cup freeze dried strawberries
  • 8 pitted medjool dates
  • 1 tbsp lemon zest
  • 1 tbsp lemon juice
  • optional: drizzle of vegan unsweetened yogurt + more freeze dried berries for on top

Preparation

  1. To start, add the almonds and freeze dried strawberries to a food processor and blend for 15-20 seconds

  2. Add the dates, lemon zest, and lemon juice, and blend for 2-3 minutes, until everything is combined into a soft dough

  3. Measure out 1 tbsp of dough for each cookie, press between your hands to form a circular shape, and set on a plate

  4. Repeat until all the dough is gone – you'll end up with about 14 cookie bites

  5. Put the cookie bites in the freezer for at least 30 minutes to set up

  6. I recommend storing leftovers in the freezer, as the texture is pretty soft and delicate – they're meant to be a one bite treat, pop in you mouth treat!
