Crispy Vegan Baked Corn Fries
Ingredients
- 1 1/2 cups cornmeal (coarsely ground)
- 6 cups water
- 2 tbl vegan butter
- 2 tbl nutritional yeast
- 3 tbl chopped parsley
- 1 tsp sea salt
- 2 tsp chopped fresh rosemary
- 2 tsp fresh thyme
- 1/2 tsp black pepper
Preparation
Soak cornmeal with water in a large bowl for 2 hours.
Pour the mixture into a large saucepan and bring to a boil on high heat, then reduce to low heat and stir with a whisk every couple of minutes for about 30 minutes.
Turn off the heat, add the remaining ingredients, and mix well.
Pour the mixture onto a parchment-lined baking pan (9x13 inches or similar size) and let it set for at least an hour until firm.
Cut into desired fry shapes (about 3 inches long and 1/2 inch wide) using a knife, then carefully place the fries onto a large parchment-lined baking sheet and mist with oil.
Bake the corn fries at 425 degrees Fahrenheit for 30 minutes, flipping them at the 20-minute mark.
Add more seasoning with herbs if desired.
Serve with your favorite fry dipping sauces, such as sriracha mayo and ketchup, sprinkled with furikake and chives.
