Healthy Veggie Tofu Stir Fry Dish
Ingredients
- 1/2 a courgette
- A handful of chestnut mushrooms
- 1/3 of a pack of @cauldronfoods tofu
- A handful of spinach
- 1 tbsp sesame oil
- 1-2 tbsp soya sauce
- 1-2 tsp siracha chilli sauce
- 1 tsp of black & white sesame seeds
- 1 garlic clove
- 1 inch piece of ginger
- Brown rice to serve
Preparation
Prep all the veg by cutting into bite sized pieces. Chop ginger & garlic as fine as possible.
Heat a pan & add sesame oil. Fry mushrooms for tofu for 10 mins until crispy on the edges then remove from pan & set aside.
Next fry mushrooms for 5 mins & then courgettes for another 5-7 mins.
Add in garlic & ginger & fry for another 2-3 mins.
Pour over soya sauce & siracha chilli sauce.
Add spinach until just wilted & then serve with brown rice & sprinkle with sesame seeds !
