Healthy Veggie Tofu Stir Fry Dish

Ingredients

  • 1/2 a courgette
  • A handful of chestnut mushrooms
  • 1/3 of a pack of @cauldronfoods tofu
  • A handful of spinach
  • 1 tbsp sesame oil
  • 1-2 tbsp soya sauce
  • 1-2 tsp siracha chilli sauce
  • 1 tsp of black & white sesame seeds
  • 1 garlic clove
  • 1 inch piece of ginger
  • Brown rice to serve

Preparation

  1. Prep all the veg by cutting into bite sized pieces. Chop ginger & garlic as fine as possible.

  2. Heat a pan & add sesame oil. Fry mushrooms for tofu for 10 mins until crispy on the edges then remove from pan & set aside.

  3. Next fry mushrooms for 5 mins & then courgettes for another 5-7 mins.

  4. Add in garlic & ginger & fry for another 2-3 mins.

  5. Pour over soya sauce & siracha chilli sauce.

  6. Add spinach until just wilted & then serve with brown rice & sprinkle with sesame seeds !
