Homemade Turkish Iskender Kebab

Ingredients

  • 300g ground meat
  • 2 tbsp yogurt
  • Red pepper powder (to taste)
  • Red pepper flakes (to taste)
  • Garlic powder (to taste)
  • Black pepper (to taste)
  • Salt (to taste)

Sauce

  • 1 tbsp tomato paste
  • 1 tomato
  • 1 clove garlic
  • 1 cup water
  • 1 tbsp vegetable oil

Base

  • Pide bread
  • 3 tbsp butter

Preparation

  1. Prepare the meat mixture at least 4 hours in advance or preferably in the morning by mixing the ground meat, yogurt, and spices well, shaping it into a roll with plastic wrap, and freezing it

  2. When ready to cook, slice the frozen meat mixture thinly and fry it in oil until cooked

  3. Cut the pide bread into thin slices and heat it in a pan until warm, then place it on a plate

  4. For the sauce, heat the oil and tomato paste in a pot until fragrant, then add the garlic and grated tomato, followed by water, and simmer for about 10 minutes until thickened

  5. Add the fried meat on top of the warmed bread

  6. Pour the prepared sauce over the meat and bread

  7. Melt the butter and drizzle it over the top before serving

Notes

  1. If tırnak pide is unavailable, use regular pide bread

  2. Afiyet olsun, enjoy your meal
