Homemade Vegan Dumplings with Vegetable Filling
Ingredients
- 300 grams of flour
- 1 teaspoon of corn flour
- 1 tablespoon of olive oil
- 2 teaspoons of salt
- 1 cup water
- 2 cups of grated carrots
- 1 medium bag of spinach cut
- 1 cup of spring onion
- 1/2 a cabbage diced
- 2 cups of diced mushrooms
Sweet chilli sauce components
- 1.5 teaspoons of sweet chilli sauce
- 3 teaspoons of maple syrup
- 3 teaspoons of tamari sauce
- 3 teaspoons of balsamic
Preparation
Place the flours, 1 teaspoon of salt, water in a bowl and combine. If the mixture appears too dry add more water and if it’s too soft add more flour.
Place the dough on a floured bench and divide into 4 pieces.
Roll out each section around 1cm thick and cut with a round object. Each section should make around 6 pieces.
In a fry pan place the oil, 1 teaspoon of salt, vegetables and sauté for 10 minutes.
Let mixture cool and then assemble the dumplings.
Place in the freezer for an hour.
Boil dumplings for 5 minutes.
