Honey Mustard Sausage Tray Bake
Ingredients
- 8 sausages
- 1 kg potatoes
- 1 red onion
- 3 tbsp olive oil
- 2 tbsp Dijon mustard
- 3 tbsp honey
- 2 cloves garlic
- 1 tsp salt
- 1/2 tsp pepper
- parsley to garnish
- green beans to serve
Preparation
Preheat oven to 200C.
Boil the potato wedges in salted water for about 10 minutes until softened but not cooked through. Drain well and let them dry for a couple of minutes.
Mix the mustard, honey, garlic, salt and pepper in a small bowl. Set aside.
Pour the olive oil onto a baking tray and add the part cooked potatoes.
Add the sausages and onion and mix so everything is coated in the oil.
Roast for around 30 to 35 minutes, turning halfway. Ensure sausages are very close to fully cooked and potatoes are golden. Cooking time may vary depending on the thickness of sausages and potatoes.
Remove from the oven and add the honey mustard mixture. Make sure everything is coated. Return to the oven for another 7 to 10 minutes to cook the garlic and caramelize everything. Monitor closely to prevent burning.
Garnish with fresh parsley and serve with steamed green beans.
Notes
This dish is family-friendly and may be enjoyed by children who dislike mustard.
Any type of sausage can be used, such as pork or chicken.
