Simple Lentil and Rice Khichdi
Ingredients
- 1/2 cup red lentils
- 1/2 cup yellow lentils
- 1/2 cup rice
- 1 tsp cumin seeds
- Salt to taste
- 1/2 tsp turmeric powder
- 1/2 cup chopped coriander leaves
- 2 tsp coconut oil
- 1 tsp black pepper
- Handful of baby spinach leaves
- 3 cups water
Preparation
Wash and rinse the lentils and rice together.
Soak for 15 minutes in water, then drain and set aside.
Heat the pressure cooker on medium heat, add coconut oil and cumin seeds, let them splutter, then add turmeric powder, spinach, salt, and stir for a minute.
After stirring for a minute, add the soaked lentils and rice and stir well.
Add water, chopped coriander, black pepper, and salt to taste.
Close the lid tightly and cook on high flame until done, which takes a few whistles in a pressure cooker or about 20 minutes in a slow cooker.
Optionally, add lemon juice for extra flavor.
Serve with fresh green cucumber salad and yogurt.
