Traditional Indonesian Empal Gepuk Dish

Ingredients

  • 500 grams beef
  • 1 bay leaf
  • 3 kaffir lime leaves
  • 700 ml water
  • 130 ml instant thick coconut milk
  • 100 grams grated palm sugar
  • 2 tablespoons tamarind juice
  • 1/2 tablespoon salt
  • 1 teaspoon bouillon powder

Spice paste

  • 8 shallots
  • 4 cloves garlic
  • 2 inches galangal
  • 1 stalk lemongrass
  • 4 candlenuts
  • 1 tablespoon coriander seeds
  • 1/2 teaspoon black pepper

Preparation

  1. In a wok, mix water and one packet of thick coconut milk, beef, ground spices, bay leaf, lemongrass, palm sugar, tamarind juice, salt, and bouillon powder. Cook until boiling, then reduce heat.

  2. When the beef is half tender, add another packet of thick coconut milk and continue cooking.

  3. After the coconut milk reduces and the spices are dry and oily, remove the beef and pound it until the fibers are visible.

  4. Then fry briefly.

  5. Serve with fried shallots, sour vegetable soup, and shrimp paste chili.
