Chickpea Spinach Tarte

Ingredients

  • 2 vegan puff pastries⁣
  • 2tb olive oil⁣
  • 1 can chickpeas⁣
  • 2ts paprika powder⁣
  • 3ts cumin⁣
  • 1 red onion⁣
  • 3 garlic cloves⁣
  • handful parsley⁣
  • salt
  • pepper
  • chilli⁣
  • 200g fresh spinach⁣
  • 130ml plantbased milk⁣
  • 1tb flour⁣

Preparation

  1. Preheat oven to 200 degrees two sided heat⁣

  2. Chop garlic and onion⁣

  3. Heat up oil in a pan⁣

  4. Add onion, garlic and a pinch of salt⁣

  5. Glaze for a couple of minutes⁣

  6. Add spices⁣

  7. Mash chickpeas using a fork or food processor⁣

  8. Add to the pan⁣

  9. Cook for about 4 minutes⁣

  10. Chop the parsley⁣

  11. Add the parsley and spinach⁣

  12. Cook for a couple of minutes⁣

  13. Taste and adjust with spices⁣

  14. Mix flour and milk and add to the chickpeas⁣

  15. Simmer for a couple of minutes⁣

  16. Then bring to a boil until it thickens⁣

  17. Let it cool down for a couple of minutes⁣

  18. Add between the puf pastry layers⁣

  19. Crimb the edges with a fork⁣

  20. Bake for about 20-30 minutes⁣

  21. Let it cool down for a couple of minutes⁣

  22. Serve with a fresh salad to the side
