Chickpea Spinach Tarte
Ingredients
- 2 vegan puff pastries
- 2tb olive oil
- 1 can chickpeas
- 2ts paprika powder
- 3ts cumin
- 1 red onion
- 3 garlic cloves
- handful parsley
- salt
- pepper
- chilli
- 200g fresh spinach
- 130ml plantbased milk
- 1tb flour
Preparation
Preheat oven to 200 degrees two sided heat
Chop garlic and onion
Heat up oil in a pan
Add onion, garlic and a pinch of salt
Glaze for a couple of minutes
Add spices
Mash chickpeas using a fork or food processor
Add to the pan
Cook for about 4 minutes
Chop the parsley
Add the parsley and spinach
Cook for a couple of minutes
Taste and adjust with spices
Mix flour and milk and add to the chickpeas
Simmer for a couple of minutes
Then bring to a boil until it thickens
Let it cool down for a couple of minutes
Add between the puf pastry layers
Crimb the edges with a fork
Bake for about 20-30 minutes
Let it cool down for a couple of minutes
Serve with a fresh salad to the side
