Crispy Breaded Chicken Parmigiana with Marinara Sauce
Ingredients
- 4 chicken breasts
- 1/2 cup all-purpose flour
- 2 eggs, whisked
- 1/2 cup panko breadcrumbs
- 1/2 cup grated parmesan cheese
- 1 tbsp dried mixed Italian herbs
- Tomato/marinara sauce, to serve
Preparation
Pound each chicken breast until they’re about 1/2 inch thick or slice in half if necessary.
In a shallow bowl, add the flour and season with a generous pinch of salt and black pepper.
In a second shallow bowl, add the whisked eggs.
In a third shallow bowl, add the breadcrumbs, grated parmesan, and herbs.
Heat some oil in a large non-stick pan.
Coat each chicken breast in flour, then egg, then breadcrumbs, shaking off any excess.
Test oil heat by adding breadcrumbs; it should sizzle before cooking.
Cook chicken for about 5 minutes per side until golden brown and cooked through.
Serve with your choice of sides and coated in marinara sauce.
