Crispy Breaded Chicken Parmigiana with Marinara Sauce

Ingredients

  • 4 chicken breasts
  • 1/2 cup all-purpose flour
  • 2 eggs, whisked
  • 1/2 cup panko breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 tbsp dried mixed Italian herbs
  • Tomato/marinara sauce, to serve

Preparation

  1. Pound each chicken breast until they’re about 1/2 inch thick or slice in half if necessary.

  2. In a shallow bowl, add the flour and season with a generous pinch of salt and black pepper.

  3. In a second shallow bowl, add the whisked eggs.

  4. In a third shallow bowl, add the breadcrumbs, grated parmesan, and herbs.

  5. Heat some oil in a large non-stick pan.

  6. Coat each chicken breast in flour, then egg, then breadcrumbs, shaking off any excess.

  7. Test oil heat by adding breadcrumbs; it should sizzle before cooking.

  8. Cook chicken for about 5 minutes per side until golden brown and cooked through.

  9. Serve with your choice of sides and coated in marinara sauce.
