Garlic Chili Lentil Wraps

Ingredients

Lentil mixture

  • 1 cup dry lentils
  • 2 cups veggie broth
  • 3 tbsp tahini
  • 1 tsp garlic chili sauce
  • 1 tsp mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp adobo seasoning
  • Juice of one lemon
  • 1/4 cup water
  • Salt and pepper to taste

Wrap components

  • 1 whole grain wrap
  • 1/2 cup cooled lentil mix
  • Handful of greens
  • Cucumber slices

Preparation

  1. Bring lentils and veggie broth to a boil, then reduce to a simmer and cook for 15-20 minutes or until lentils are cooked and most liquid is absorbed; drain if necessary.

  2. In a bowl, whisk together tahini, garlic chili sauce, mustard, garlic powder, adobo seasoning, lemon juice, water, salt, and pepper to make a sauce; adjust thickness as desired.

  3. Once lentils are cooked, add the sauce and mix well to coat the lentils.

  4. Serve the lentils warm or cool, and refrigerate for later use in wraps or bowls.

Wrap assembly

  1. Layer greens and cucumber slices on a whole grain wrap.

  2. Add 1/2 cup of the cooled lentil mixture.

  3. Roll up like a burrito and enjoy whole or cut in half.

Tips

  1. Make the lentil mixture in advance and store in the refrigerator to use for wraps throughout the week.
