Loaded Sweet Potato Salad

Ingredients

  • Spring mix
  • Arugula
  • Cucumber
  • Pomegranates
  • Sweet potato
  • Balsamic dressing

Preparation

  1. Bake the sweet potato in the oven at 375 degrees Fahrenheit for 1 hour.

  2. Allow it to cool, then remove the skin and slice it.
