Loaded Sweet Potato Salad
Ingredients
- Spring mix
- Arugula
- Cucumber
- Pomegranates
- Sweet potato
- Balsamic dressing
Preparation
Bake the sweet potato in the oven at 375 degrees Fahrenheit for 1 hour.
Allow it to cool, then remove the skin and slice it.
In a bowl, combine the spring mix, arugula, cucumber, pomegranates, and sliced sweet potato.
