Tofu Thai Green Curry

Ingredients

  • Tofu
  • Coconut oil
  • Aldi curry kit
  • Onion
  • Broccoli
  • Mangetout
  • Carrot
  • Garlic
  • Yellow pepper
  • Wholegrain rice

Preparation

  1. Cube the tofu and fry it in coconut oil until golden.

  2. Prepare the green curry base using the Aldi curry kit according to package directions.

  3. Add onion, broccoli, mangetout, carrot, garlic, and yellow pepper to the curry mixture.

  4. Simmer until the vegetables are tender and flavors combine.

  5. Serve the curry over wholegrain rice.

Tips

  1. Avoid eating the dried red chillies from the kit as they are very spicy.
