Vegan Chickpea Tuna Quesadilla

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 celery rib, chopped very small
  • 1/8 of a red onion, chopped very small
  • 1/4 of a cucumber, peeled and chopped very small
  • 2-3 tbsp vegan mayo
  • 1/2 tbsp stone ground mustard
  • Pinch of salt
  • Pinch of ground pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Quesadilla components

  • Corn or flour tortillas
  • Vegan cheese of choice
  • (Optional) hot sauce
  • (Optional) avocado

Preparation

  1. In a bowl, add drained and rinsed chickpeas and mash them using a fork.

  2. Add all the remaining ingredients and mix together.

  3. Adjust the amount of mayo and seasonings to taste.

  4. Add a small amount of oil to a pan if desired for crispiness.

  5. Place cheese on one side of a tortilla and heat until it can be folded.

  6. Fold the tortilla over the cheese and press down to melt the cheese.

  7. Flip after about one minute and remove when the cheese is melted.

  8. Add the chickpea tuna to each quesadilla.

  9. Optionally, return to the pan to heat the tuna if desired.

  10. Serve with avocado slices and hot sauce if desired.
