Vegan Halloumi Tomato Cucumber Hummus Sandwich

Ingredients

  • 6 slices vegan halloumi
  • 1 field tomato, sliced
  • 3 tablespoons hummus
  • 1/2 garden cucumber, thinly sliced
  • Sea salt and cracked pepper, to taste
  • 6 pieces gluten-free bread

Preparation

  1. Toast the gluten-free bread.

  2. While the bread is toasting, sear the vegan halloumi in a nonstick pan until brown on both sides.

  3. Smear hummus on the toasted bread and layer with the thinly sliced cucumber, sliced tomato, and seared halloumi.

  4. Slice the sandwich and enjoy.
