Alkaline Amaranth Cookies with Fruits and Nuts

Ingredients

  • 7-8 baby bananas (ripe)
  • 2-3 tbsp agave/date/maple syrup
  • 1 tbsp avocado oil
  • 1 1/2 cups amaranth flour
  • Pinch of salt
  • 1 1/2 cup chopped walnuts or Brazil nuts
  • 1/2 cup goji berries or other dried fruit
  • 1 cup blueberries

Preparation

  1. Mash together the bananas, syrup, and oil.

  2. Add the amaranth flour, salt, nuts, berries, and blueberries.

  3. Bake at 400 degrees for 20 minutes.
