Alkaline Amaranth Cookies with Fruits and Nuts
Ingredients
- 7-8 baby bananas (ripe)
- 2-3 tbsp agave/date/maple syrup
- 1 tbsp avocado oil
- 1 1/2 cups amaranth flour
- Pinch of salt
- 1 1/2 cup chopped walnuts or Brazil nuts
- 1/2 cup goji berries or other dried fruit
- 1 cup blueberries
Preparation
Mash together the bananas, syrup, and oil.
Add the amaranth flour, salt, nuts, berries, and blueberries.
Bake at 400 degrees for 20 minutes.
