Black Glutinous Rice Kuih Koci

Ingredients

  • 2 cups glutinous rice flour
  • 5 tablespoons black glutinous rice flour
  • a pinch of salt
  • 1 cup water

Filling

  • 1 grated coconut
  • 2 palm sugar blocks
  • 3/4 cup white sugar
  • 1 tablespoon wheat flour
  • pandan leaves

Coconut sauce

  • 2 tablespoons rice flour
  • 2 cups thick coconut milk
  • a pinch of salt

Preparation

  1. Mix the glutinous rice flour, black glutinous rice flour, and salt together, then gradually add water until the dough is not sticky and not too soft

  2. For the filling, cook palm sugar, 3/4 cup white sugar, and knotted pandan leaves with a little water until palm sugar dissolves, then strain the mixture

  3. Add grated coconut to the strained mixture and cook briefly until somewhat dry, then add the wheat flour mixed with a little water and cook until moist, let it cool and shape into balls

  4. Wilt banana leaves over fire

  5. For the coconut sauce, mix rice flour into thick coconut milk, add salt, stir well, and cook until thickened, then set aside

  6. Boil water in a pot

  7. Take portions of the dough, flatten, add the coconut filling, and shape back into balls

  8. When the water is boiling, add the dough balls and cook until they float, then remove

  9. Dip the cooked dough balls into the coconut sauce mixture

  10. Place the dipped dough balls on oiled banana leaves, wrap neatly

  11. Steam for 7 minutes to infuse the banana leaf aroma
