Blue Banana and Blueberry Muffins

Ingredients

  • 1/3 cup extra virgin olive oil
  • 1 cup maple syrup
  • 2 large eggs
  • 1 cup ripe mashed bananas (about 3 large bananas)
  • 1/4 cup almond milk
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 2 cups self raising flour
  • 1 1/2 tbsp butterfly pea powder
  • 1 banana chopped into small pieces
  • 1 cup blueberries

Preparation

  1. Preheat oven to 175C and line a muffin tray with muffin cases

  2. In a bowl whisk together the olive oil, maple syrup, eggs, mashed bananas, milk and vanilla

  3. Take another large bowl, put a fine sieve on top and sieve in the flour, baking powder, cinnamon, butterfly pea powder and salt

  4. Pour the wet mix into the dry mix and mix till just combined, don’t overmix

  5. Add the blueberries and chopped banana and using a spatula gently fold them in

  6. Spoon the mix into the muffin cases and bake for 25 mins till a knife comes out clean
