Brazilian Chocolate Strawberry Brigadeiro

Ingredients

  • 1 can sweetened condensed milk
  • 1 can heavy cream
  • 3 tablespoons cocoa powder 50%
  • 1 tablespoon butter
  • 2 cups sugar
  • 1 cup water
  • 2 tablespoons white vinegar
  • Edible glitter (optional)

Preparation

  1. In a saucepan, combine sweetened condensed milk, heavy cream, cocoa powder, and butter

  2. Cook over medium heat, stirring constantly, until the mixture thickens and pulls away from the sides of the pan

  3. In a separate pan, combine sugar, water, and white vinegar

  4. Heat the sugar mixture to hard crack stage, around 300Β°F (150Β°C), without stirring to avoid crystallization

  5. Prepare strawberries by washing and drying them thoroughly

  6. Shape the thickened brigadeiro mixture into balls or desired forms and incorporate strawberries inside or coat with the crunchy sauce

  7. Dip or roll the brigadeiro in the hardened sugar syrup mixture for a crunchy exterior

  8. Allow to cool and set before serving, optionally adding edible glitter for decoration
