Crispy Fried Banana Fritters

Ingredients

  • 1 cup flour
  • 1 teaspoon baking powder
  • 1 tablespoon fine grain sugar
  • 2 large eggs
  • 1 teaspoon liquid vanilla
  • 1/2 cup milk
  • 1 teaspoon oil
  • 6 medium bananas

For frying

  • Oil

Preparation

  1. Heat the oil in a deep skillet and sift the flour and baking powder in a deep bowl.

  2. Add the sugar, eggs, vanilla, and oil, and mix with a hand whisk.

  3. Add the milk and mix continuously until the sugar dissolves.

  4. Peel the bananas, dip the banana pieces in the mixture, lift them with a fork, and shake off the excess mixture.

  5. Place the banana pieces in the oil and fry until golden brown.

  6. Place them on absorbent paper to remove excess oil, then transfer to a serving dish and serve hot.
