Nostalgic German Kuchen with Strawberries and Coconut
Ingredients
- 1/2 cup butter
- 1.5 cups @bobsredmill all purpose flour
- 1 cup sugar
- 2 egg yolk and 1 large egg
- 1.5 teaspoon salt
- 1.5 teaspoons baking powder
- 1/2 cup oat milk
- 2 cups strawberries
- 1 teaspoon turbinado sugar for topping
- 1/2 cup Bob’s shredded coconut
Preparation
Preheat oven to 350 degrees
Whisk flour with baking soda and salt and set aside. Add in coconut as well.
In another bowl, cut butter into flour mixture. Blend until fluffy with an electric mixer.
Add one egg at a time.
Use a rubber spatula to stir in the flour mixture and oat milk, alternating and starting with the flour first.
Grease a round 8 or 9 inch cake pan.
Pour the batter into the pan, and line with cut strawberries.
Bake for 40 minutes or until a toothpick comes out clean.
Let cool for ten minutes before slicing like you would a pie.
Sprinkle more coconut on top with a little turbinado sugar.
Serve with ice cream and some more fresh strawberries.
