Peanut Chocolate Chunk Cookie Dough Bars

Ingredients

Dry

  • 1 1/2 cup finely ground oat flour
  • 1 Tbsp Tapioca starch
  • 1/4 tsp Baking soda
  • 1 tsp Baking powder
  • 1/2 cup chocolate chunks or 1 large dark chocolate bar, chopped
  • 1/2 cup salted whole peanuts

Wet mix

  • 1/2 cup Plain non-dairy yogurt
  • 2 Tbsp Maple syrup
  • 3 Tbsp Oil
  • 1 tsp vanilla

Preparation

  1. Preheat oven to 350 degrees.

  2. Line an 8x8 pan with parchment paper or oil it very well.

  3. Add dry ingredients to a medium bowl, including chocolate and peanuts, and stir.

  4. Make a well in the middle of the dry ingredients and add wet ingredients.

  5. Mix until just combined and pour into prepared baking pan.

  6. Bake for 30-34 minutes.

Cooling tips

  1. Let sit until completely cool; this recipe is even better if cooled overnight.

  2. Store in the fridge for extra gooey cookie dough texture.

  3. It can be enjoyed cold with a spoon for best texture.
