Peanut Chocolate Chunk Cookie Dough Bars
Ingredients
Dry
- 1 1/2 cup finely ground oat flour
- 1 Tbsp Tapioca starch
- 1/4 tsp Baking soda
- 1 tsp Baking powder
- 1/2 cup chocolate chunks or 1 large dark chocolate bar, chopped
- 1/2 cup salted whole peanuts
Wet mix
- 1/2 cup Plain non-dairy yogurt
- 2 Tbsp Maple syrup
- 3 Tbsp Oil
- 1 tsp vanilla
Preparation
Preheat oven to 350 degrees.
Line an 8x8 pan with parchment paper or oil it very well.
Add dry ingredients to a medium bowl, including chocolate and peanuts, and stir.
Make a well in the middle of the dry ingredients and add wet ingredients.
Mix until just combined and pour into prepared baking pan.
Bake for 30-34 minutes.
Cooling tips
Let sit until completely cool; this recipe is even better if cooled overnight.
Store in the fridge for extra gooey cookie dough texture.
It can be enjoyed cold with a spoon for best texture.
