Simple Vegan Tofu Scramble with Fresh Herbs

Ingredients

  • 2 slices of crusty bread
  • 180g organic soft-medium tofu
  • 1 tsp olive oil
  • 1 tsp garlic puree or 1 fresh clove crushed
  • 1/4 tsp turmeric
  • 1/4 tsp dijon mustard
  • 1/2 tsp Marjoram or mixed herbs
  • 1 generous tbsp nutritional yeast
  • 50ml oat milk
  • pinch of sea salt
  • generous grinding of black pepper

Toppings

  • fresh coriander, parsley, or chives finely chopped
  • chilli flakes (optional)

Preparation

  1. Use a bread knife to slice your bread.

  2. Put the olive oil and garlic puree in a pan on medium heat. Then add the tofu and use a fork to mash it up in the pan. Protect your non-stick pans by mashing it in a bowl before adding it to the pan.

  3. Take it off the heat and add the remaining ingredients (except the toppings).

  4. Place back over the heat and use a wooden spoon to combine all the ingredients together well. Leave to simmer on a low heat for 6-8mins.

  5. Whack your toast on and prepare your toppings.

  6. Serve up and voila!
