Simple Vegan Tofu Scramble Breakfast
Ingredients
- 2 slices of crusty bread
- 180g organic soft-medium tofu
- 1 tsp olive oil
- 1 tsp garlic puree or 1 fresh clove crushed
- 1/4 tsp turmeric
- 1/4 tsp dijon mustard
- 1/2 tsp Marjoram or mixed herbs
- 1 generous tbsp nutritional yeast
- 50ml oat milk
- pinch of sea salt
- generous grinding of black pepper
Toppings
- fresh coriander, parsley, or chives finely chopped
- chilli flakes (optional)
Preparation
Use a bread knife to slice your bread.
Put the olive oil and garlic puree in a pan on medium heat. Then add the tofu and use a fork to mash it up in the pan.
Take it off the heat and add the remaining ingredients except the toppings.
Place back over the heat and use a wooden spoon to combine all the ingredients together well. Leave to simmer on a low heat for 6-8 minutes.
Prepare your toast and toppings.
Serve and enjoy.
Tips
For a runnier and creamier texture, use silken or soft tofu; for a firmer bite, use medium or firm tofu.
Consider trying Kala Namak (black salt) for enhanced flavor.
