Sweet Hazelnut Filled Roll Pastry
Ingredients
Dough
- 1 cup warm milk
- 1/2 cup butter and oil mixture
- 1/2 tea cup sugar
- 1/2 packet fresh yeast or 1 packet dry yeast
- 1 packet vanilla
- 1 egg white (reserve yolk for topping)
- 3 cups flour
Filling
- 1 cup ground hazelnuts
- 1 cup coarsely ground hazelnuts
- 1/2 tea cup milk
- 1 tea cup powdered sugar
- 1 tea cup butter and oil mixture
Preparation
In a mixing bowl, combine sugar, milk, yeast, vanilla, egg white, and melted butter-oil mixture, and mix well. Gradually add flour and knead into a soft dough. Cover and let it rise for 1 hour.
For the filling, mix ground hazelnuts, coarsely ground hazelnuts, milk, sugar, and butter-oil mixture in a bowl and set aside.
Lightly flour the work surface and roll out the dough into a large square. Spread the filling evenly over the dough. Roll up the dough into a log. Gently stretch the roll and cut into pieces about two fingers thick. Press the center of each piece with a spatula handle to shape. Place on a parchment-lined baking sheet, spaced apart. Let rise for 15 minutes. Brush with the reserved egg yolk. Bake in a preheated 180°C oven until golden.
Tips
After baking and cooling, store in a freezer bag in the freezer. To serve, thaw and warm slightly to enjoy fresh like just baked.
