Loaded Potato Barbecue Chicken Casserole

Ingredients

  • 10 slices chopped bacon
  • 1 1/2 pounds boneless, skinless chicken breasts
  • 1 (32-ounce) package Bob Evans original mashed potatoes
  • 1 cup barbecue sauce
  • 1 cup shredded Cheddar cheese

Preparation

  1. Preheat oven to 400°F.

  2. Cook 10 slices of chopped bacon in a large skillet over medium heat until crisp; drain and reserve 2 tablespoons of drippings in the skillet.

  3. Cut 1 1/2 pounds of boneless, skinless chicken breasts into bite-size pieces.

  4. Cook the chicken in the hot drippings in the skillet over medium heat until done.

  5. Meanwhile, heat 1 (32-ounce) package of Bob Evans original mashed potatoes according to package directions.

  6. Spread the potatoes in a greased 13- x 9-inch baking dish; top with the chicken, 1 cup of barbecue sauce, 1 cup of shredded Cheddar cheese, and the bacon.

  7. Bake for 20 minutes or until thoroughly heated.
