Loaded Potato Barbecue Chicken Casserole
Ingredients
- 10 slices chopped bacon
- 1 1/2 pounds boneless, skinless chicken breasts
- 1 (32-ounce) package Bob Evans original mashed potatoes
- 1 cup barbecue sauce
- 1 cup shredded Cheddar cheese
Preparation
Preheat oven to 400°F.
Cook 10 slices of chopped bacon in a large skillet over medium heat until crisp; drain and reserve 2 tablespoons of drippings in the skillet.
Cut 1 1/2 pounds of boneless, skinless chicken breasts into bite-size pieces.
Cook the chicken in the hot drippings in the skillet over medium heat until done.
Meanwhile, heat 1 (32-ounce) package of Bob Evans original mashed potatoes according to package directions.
Spread the potatoes in a greased 13- x 9-inch baking dish; top with the chicken, 1 cup of barbecue sauce, 1 cup of shredded Cheddar cheese, and the bacon.
Bake for 20 minutes or until thoroughly heated.
