Margarita Inspired Dessert Bars

Ingredients

Base

  • 150 g salted crackers
  • 150 g melted butter
  • 1 tablespoon granulated sugar

Filling

  • 5 egg yolks
  • 400 g condensed milk
  • 120 ml lime juice
  • 2 teaspoons grated lime zest
  • 60 ml white tequila
  • 2 tablespoons rum
  • 1 pinch fine salt
  • Flaky salt for finishing

Preparation

  1. Preheat the oven to the appropriate temperature and line a baking pan with parchment paper.

  2. Mix the base ingredients together and press firmly into the prepared pan.

  3. Bake the base until it is golden and set, then allow it to cool slightly.

  4. Whisk the filling ingredients together until well combined.

  5. Pour the filling over the cooled base and bake until the filling is set and no longer jiggles in the center.

  6. Remove from the oven, cool completely, and refrigerate until firm before sprinkling with flaky salt and cutting into bars.
