Brazilian Queijadinha Coconut Dessert
Ingredients
- 200g grated coconut flakes
- 200ml coconut milk
- 1 can condensed milk
- 2 eggs
- 1/2 cup coarsely grated Parmesan cheese
- 1 heaping tablespoon butter
Preparation
Place the grated coconut in a container and mix with the coconut milk. Set aside.
Beat the eggs and add the condensed milk. Then add the butter and mix well.
Add the reserved coconut mixture and cheese. Mix until homogeneous.
Place in individual molds using a spoon, such as cupcake or pie molds. Sprinkle grated coconut on top for decoration and crunch.
Bake in a preheated oven at 200 degrees for 30 minutes or until golden.
