Rich Chocolate Cake with Double Fudge and Ganache
Ingredients
Cake batter
- 3 eggs
- 5 tablespoons melted butter
- 5 heaping tablespoons brown sugar
- 1/2 cup whole or plant-based milk
- 3 tablespoons cocoa powder
- 1 1/2 cups oat flour
- 1 tablespoon baking powder
Chocolate fudge filling
- 1 can sweetened condensed milk
- 2 tablespoons cocoa powder
- 2 tablespoons butter or coconut oil
Ninho fudge filling
- 1 can sweetened condensed milk
- 2 tablespoons butter
- 3 tablespoons powdered milk
Ganache
- 100 grams 60% dark chocolate
- 50 grams heavy cream
Preparation
Cake
Blend all liquid ingredients in a blender for about 3 minutes
Add the dry ingredients (except baking powder) and blend until combined
Add baking powder and mix again
Grease a pan with butter and cocoa powder, then pour in the batter
Bake in a preheated oven for approximately 25 minutes
Chocolate fudge filling
Stir all ingredients over low heat for about 10 minutes
Let cool
Ninho fudge filling
Stir all ingredients over low heat until it pulls away from the bottom of the pan
Let cool
Ganache
Microwave both ingredients until completely melted
Assembly
Cut the cake into two equal parts
Fill with the chocolate fudge filling
Add the Ninho fudge filling on top of the chocolate fudge filling
Place the other half of the cake on top
Refrigerate for about 15 minutes to set
Cover with ganache
