Arabic Lady's Fingers Dessert
Ingredients
- 1 packet baklava dough
- 1/2 cup corn oil
Ashta mixture
- 2 cups milk
- 1/4 cup flour
- 2 tablespoons sugar
- 1 tablespoon rose water
- 1/2 cup qaymak or cream
For frying
- corn oil
For serving
- syrup
For garnish
- finely ground pistachio
Preparation
Remove the dough from the refrigerator or freezer and let it come to room temperature.
In a deep dish, place the oil and prepare a wide brush.
Glue mixture: In a small dish, place one tablespoon of flour and add a little water while stirring until a liquid mixture forms.
Ashta: In a medium pot, place milk, flour, sugar, and rose water then put the pot on medium heat and use a hand whisk to stir until the flour dissolves.
Place the pot on medium heat and use a wooden spoon to stir until the mixture boils and thickens.
Pour the mixture into a wide dish and let it cool completely then add the qaymak and stir with a wooden spoon to mix and obtain a smooth ashta.
On the table, place a sheet of dough and use the brush to coat it with oil then fold it over itself once and cut into strips 2 inches wide using a pizza cutter or sharp knife.
Place one strip on the table and lay a second strip over it in the opposite direction to form a T shape.
Using a small spoon, place a little ashta in the center of the dough then fold the end over the filling, roll it into a small roll, brush the end with a little glue mixture using your finger, seal it well, and continue shaping the remaining dough into uniform rolls.
In a deep frying pan, add oil to a depth of about 2 inches and heat over medium heat.
In a deep dish, place a generous amount of syrup.
Fry the lady's fingers until golden brown then use a slotted spoon to remove them from the oil and place directly in the syrup, turn for a few seconds, and serve.
