Fried Semolina Stars with Cheese Filling

Ingredients

Dough

  • 1 cup flour
  • 1 cup fine semolina
  • 2 tablespoons powdered sugar
  • 1 teaspoon instant yeast
  • 1/2 teaspoon baking powder
  • 1/4 cup corn oil
  • 3/4 cup water

Filling

  • 10 cubes cream cheese

Serving

  • Syrup
  • Halabi pistachios

Preparation

  1. In a deep bowl, place the flour, semolina, sugar, yeast, baking powder, corn oil, and water. Using a plastic spoon, mix the ingredients until you have a cohesive, smooth, and thick dough.

  2. Cover the bowl with plastic wrap and place it in a warm place until the dough doubles in size.

  3. Cut the cream cheese cubes into small squares.

  4. Take a piece of dough the size of a walnut and shape it into a small disc in your palm. Place a piece of cheese in the center. With your fingertips, seal the edges of the dough over the cheese in a star shape, ensuring the center is well sealed to prevent cheese from leaking during frying. Repeat with the remaining dough and cheese to form stars.

  5. In a deep frying pan, add oil to a height of about 2 inches. Place the pan over medium heat until the oil is hot.

  6. Fry several stars in the pan until they are golden brown. Using a slotted spoon, remove the semolina stars and place them directly in the syrup for a few seconds, then transfer to a serving plate.

  7. Garnish the semolina stars with crushed pistachios and serve.
