Fairy Kisses Christmas Cookies with Toffifee

Ingredients

Dough

  • 160 g all-purpose flour (Type 405)
  • 60 g powdered sugar
  • a pinch of salt
  • 100 g butter
  • 2 large egg yolks

Meringue and assembly

  • 45 Toffifee candies
  • a pinch of salt
  • 140 g powdered sugar
  • 3 large egg whites

Preparation

Dough

  1. Mix flour, powdered sugar, and salt in a bowl

  2. Separate the eggs

  3. Set aside the egg whites for the meringue

  4. Add the egg yolks and butter to the flour mixture

  5. Knead quickly with your hands to form a smooth dough

  6. Shape the dough into a roll with a diameter the size of a Toffifee

  7. Wrap the roll in plastic wrap and chill for 1 hour

Assembly

  1. Preheat the oven to 160°C (convection: 140°C)

  2. Line baking sheets with parchment paper

  3. Slice the chilled dough roll into thin rounds

  4. Place the rounds on the prepared baking sheets

  5. Place one Toffifee candy upside down on each dough round

Meringue and baking

  1. Beat the reserved egg whites and one additional egg white until stiff peaks form

  2. Gradually add salt and powdered sugar, and beat for 4-5 minutes until stiff

  3. Transfer the meringue to a piping bag fitted with a small round tip

  4. Pipe the meringue over each Toffifee candy, covering it completely from bottom to top

  5. Bake for about 18 minutes until the meringue is set

  6. Let cool completely on the baking sheet
