Easy Vegan Gravy for Thanksgiving

Ingredients

  • 1/4 cup Earth Balance
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, chopped
  • 3 cups vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon vegan Worcestershire sauce
  • 1 teaspoon poultry seasoning
  • 1/4 cup all-purpose flour or gluten-free flour

Optional

  • 1/4 cup dried mushrooms
  • 1 1/2 cups hot water

Preparation

  1. Melt the butter and cook the onion and garlic for 3 minutes over medium heat.

  2. Stir in the remaining ingredients and bring to a boil.

  3. Strain the mixture through a fine mesh strainer.

  4. Return the liquid to the pot and bring to a simmer.

  5. Scoop out 1 cup of broth and mix with 1/4 cup all-purpose flour or gluten-free flour until well combined.

  6. Pour the mixture back into the broth and whisk to combine.

  7. Bring to a simmer and serve.

Tips

  1. You can make it ahead and reheat, adding a little water if needed to thin.

  2. For more flavor, soak 1/4 cup dried mushrooms in 1 1/2 cups hot water for 30 minutes, then strain and use 1 cup of the mushroom water in place of one cup of the vegetable broth.
