Chia Pudding Parfait with Fresh Fruits

Ingredients

  • 3 Tbsp Chia seeds
  • 1/4 cup Oats
  • 1 tsp Pitaya powder
  • 3/4 cup Almond milk
  • 1 Tbsp Maple syrup

Parfait components

  • Puffed Millet
  • Passion Fruit
  • Whipped Coconut Cream
  • Raspberries
  • Champagne grapes

Preparation

  1. Place all chia pudding ingredients in a mason jar and shake gently to combine.

  2. Refrigerate for a few hours or overnight, shaking occasionally to avoid settling.

Assembly

  1. Layer the puffed millet, chia pudding, passion fruit, and whipped coconut cream in parfait glasses.

  2. Top with raspberries, champagne grapes, and additional whipped coconut cream.
