Easy Creamy Vegan Tiramisu
Ingredients
- 25 ounces tofu
- 1/2 cup dairy-free milk
- 1/2 cup powdered sugar
- 2 teaspoons vanilla
- 2 teaspoons lemon juice
- 2 cups warm water
- 4 tablespoons instant espresso
- 4 tablespoons rum (optional)

Preparation
In a large blender, add the tofu, dairy-free milk, powdered sugar, vanilla, and lemon juice, then blend until smooth and creamy for at least 3-4 minutes to make the mascarpone filling.
In a large bowl, mix the warm water, instant espresso, and rum.
Dip each vegan wafer cookie fully into the mixture and remove quickly to prevent it from becoming too mushy.
Place the dipped wafers at the bottom of your tiramisu pan and cover the entire layer.
Add a thick layer of the mascarpone filling on top.
Sift a thin layer of cacao over the filling.
Repeat the layering process with cookies, filling, and cacao until you reach the top of the pan.
Refrigerate for a few hours before serving.
Tips
For an optional fancy presentation, pipe the mascarpone filling onto the top layer using a piping bag.
