Easy Vegan Gluten-Free Pancakes
Ingredients
- 1 1/4 cup gluten-free all-purpose flour
- 2 1/2 tbsp maple syrup
- 1 cup unsweetened cashew milk*
- 1 1/2 tsp baking powder
- 1 tbsp coconut oil, melted
- 1 1/2 tsp apple cider vinegar
- 1/2 tsp cinnamon
Preparation
In a bowl, combine flour, baking powder and cinnamon together.
In a separate bowl, combine the maple syrup, milk, coconut oil, and apple cider vinegar together. Slowly pour in flour mixture.
Heat a pan on medium-low heat. Add about 3 tbsp of the batter into the pan and cook for about 2 minutes. Flip to the other side and cook for another 1-2 minutes. Continue with remaining batter.
When ready, drizzle with maple syrup and add whatever toppings you like. Enjoy while warm!
